Chocolate Cake. Like a lot of chefs coming up in restaurants. Desserts intimated me. They were an afterthought. I ran busy casual restaurants. The desserts I put on the menu would come from the salad station, they needed to be easy. Creme Brûlée or Chocolate Mousse was about as far as we got. As a yacht chef I realized that wasn’t going to cut it. Recently I challenged myself to be better, gain new skills and push myself from my comfort zone. @masterclass is an incredible learning tool, not only for chefs. There is amazing content from top industry professionals, across the spectrum.... This dessert is an attempt at the @dominiqueansel classic. Watching his @masterclass, following his direction and serving his dessert to my guests was an incredibly fulfilling experience. #yachtlife #yachtchef #yachtlife #yachting #chocolate #cakedecorating #yachtchefs
